Ruth and the Monforte Dairy crew visit Envers of Morriston for dinner. This evening Chef Ken is using Monforte cheese, Halloumi, Ricotta and Toscano in a variety of dishes. Ken smokes Monforte’s Riccota cheese which becomes the filling for his Tortellini.
